Let's take few examples:
* Imbalance of the thyroid hormones, a condition known as hypothyroidism is associated with iron deficiency anaemia
* Imbalance of sex hormones can lead to menorrhagia (heavy periods) which will eventually lead to iron deficincy

Well, I had some weird symptoms lately and today morning I woke up in a strong headache and all, so went to a clinic and had a hemoglobin test and was diagnosed to have iron deficiency due to hormone changes as nothing was wrong with my diet!
So how would I know that the iron deficiency I have is cause of the hormones the Doctor was talking about?
And yeah, the second example you mentioned isn't applicable with my case.

A Hb test will show a low Hb level & you are diagnosed with anaemia, nothing more, nothing less
There is no way whatsoever that a Dr can tell you the cause of the anaemia unless he runs further tests & obtains further history
If you only underwent a test of Hb, then your provisional diagnosis is anaemia, the type must be further looked into by undergoing a peripheral blood smear to start with
Tell your Dr to stop using fancy words just for the sake of it
i guess, what the dr was trying to say is that u got the low Hb because of menstruation.
