Here you can share your funny moments at the kitchen.. and also a mastered recipe you been doin' ( not a copy paste from other sites or something).. it has to be something you tried:yes:

I know many of you guys might enjoy cooking..
And am one of you..

But it wasn't really easy from the begining;

Having my parents against the idea of me going to the kitchen, for health and security reasons.. made it even more exciting to learn cooking.:dev::p:dev:
However, when i was little I enjoyed sitting on the kitchen bench watching my mom prepering meals on many occasions, and i would take notice of things kids wouldn't notice. (am not telling you like what) :p

My first time to prepere something other than sandwitchs or fried eggs was when I was 8 years old!! Believe it or not!!

After mid-night of one day.. everyone was asleep when I felt hungry, so I went to the kitchen, got 3 pieces of raw frozen chicken.
I boiled them a small sauce pan with water+ salt+peper+spices that i didn't even know what they were and heaps of lime juice!
When the water was reduces to the 1/4 of its original volume.. I took the chicken out, I marinated it with some Olive oil and crushed garlic.. into the electric oven to get that golden colour on it. Meanwhile, I used the boiling water to make a what i would call today; gravy!
I added some onions, chopped tomato, tomato paste and cream.. I let it simmer for 20 minutes.
The chicken was out of the oven, golden-brown as i wanted.. I returned them to the gravy.. and served it to my self with Tandoor Bread!!
It wasn't bad /.... actually it was really good for my first time.. but I ended in the hospital for the next 2 days suffering from Dehydration due to sever form of diarrhea!!:inno::cry::inno:

but that didn't put me off..Since then.. I learnt more and more by reading recipes, and watching cooking shows.
I consider cooking to be one of my hobbies!!



i have mastered many recipes.. and invented my own :p
But one of the simplest things, yet fancy, is Chicken Fried rice.

The recipe for Chicken fried rice:

First, Boil a large amount of salted water.. then add 1 cup of Basmati rice. let it boil for 9 minutes.. drain and keep the rice aside.

Get bone-less chicken cut into small pieces.. marinate it with salt+paper+one table spoon of corn flour and just little bit of whisked egg.
In a wok ( or large pan) , fry the chicken in olive oil, until tender. Put it in a plate aside.

In the same wok, add some finely chopped ( or crushed ) garlic to 3 table spoons of olive oil.. saute it until golden.. then add 2 beaten up eggs. First treat it as omelete, but then start stirring it, so it becomes fluffed up before Adding chopped carrot, stirr it with the egg for a minute, then goes the corn and peas. stirr the whole thing for 2 minutes. Add bit of soy sauce. Then add the sliced capsicum( bell peper) and stirr fry all together for anopther couple of minutes.
Now, you must put in the ready made chicken and one table spoon of soy sauce.. stir the thing for 2 minutes. here you can add some chilli if you want to and season with some salt and peper.
Fold the rice into the mixture.. and keep it on the heat for another couple of minutes.
And there we go... it is ready.
Garnish with spring onion and serve it with pickled chilli and garlic chilli sauce.

One of my dearest childhood memories is watching my mother make a cake.. then when she put the mix into the cake tin, she'd give me the bowl to lick clean.. fingers, face and hair full of cake mix. It was delicious! :D

That reminds me the first time a fried eggs ; I was 8 I think!
I didn't know that the oil can become so hot that when I added the eggs, I heard sounds of bursting bubbles, which scared me off, and I let the egg burn!
That was my first and last time to burn anything at all :D

I never was like this till 2 years ago, when my flat mate taught me about the trick.. but she had to fight with me from later onn for the mix lol

Making sweets in the kitchen is the only time I let the kids 'participate'.. and it's always messy, but lots of fun. And of course it makes them think they've actually made them themselves. :D

(This is the dish I accidently set the frying pan on fire also) :)

OK D. here is one of my favs that everyone in my family enjoys when I make it. Is a very traditional dish from the islands--very basic and yummy:

Tostones

3 green plantains
oil for frying
garlic powder
salt

Making tostones is easy….. Slice the peeled plantains diagonally into 1" slices. Fry the slices over medium heat until they soften. Remove from oil and drain on paper towels. Using a tostonera (a press), slightly mash each piece to about half an inch in thickness. If a tostonera is not available insert the pieces between a folded piece of brown-paper sack and press down using a saucer. It is best to press all the pieces first before going on the next step. Dip each piece in warm salted water and fry again until crispy. Remove from the oil and drain on paper towels. Salt them. Tostones may be served with ketchup (kid's favorite) or with garlic sauce.

Great!! I have never tried plantains before!! always thought they'll taste like banana, so i would rather eat banana lol
But where I am at the moment, I don't think I can find plantains!!

I think kids tend to eat more of something they had to do with cooking it .. they trick them selves easily lol :cute:

my potato wedges.



wash your potatoes.
keep the skin on, cut into wedges and put in a bowl,
toss in olive oil, curry, salt and pepper and some dried rosemary.
put in a hot oven for 45 mins, turn half way through the cooking.
share. eat.

my chicken strips.
cut two large chicken breasts into strips.
put on some honey, soy sauce, olive oil, salt, pepper. drizzle with olive oil.
put in a hot oven for twenty minutes.

serve with the wedges and some sour creamy sauce. (whip up some fresh cream, add lemon and some paprika)

lasagne. the simple way

make a simple bolognaise sauce (fry some onions, finely chopped carrots and any bland veg you might have in your fridge)
use olive oil.
add beef mince.
add a cupful of red wine. the alcohol will fume away, but if that's not permissable, replace it with a cupful of stock or a buillion cube and some hot water.
simmer and let reduce.
add a bowlful of chopped tomatoes, or a can of tomatoes.
some tomato paste.

there's your bolognaise sauce.

now you need a dish.
put a ladleful of your bog sauce in, layer the lasagne sheets over it.
layer five spoonfuls of cream and cheese on top
more lasagne sheets, more bog sauce, more cream and cheese.
keep going until your ingredients run out.
top up with bog sauce and more cheese.
best lasagne sheets to use are barilla or agnesi.if those are unavailable, there are ways to make your own fresh pasta, but that's another post or a totally new thread.

Diabian I might actually try your Fried Rice recipe (although I usually leave out all the vegetables, eat the chicken alone then have the rice with eggs lol) :D.
I tried making spaghetti bolognese not long ago and failed miserabley. My friend and I had a few bites only, and the rest of it remained in the fridge until I couldn't stand it any longer and threw it all away (which felt bad, but no one would've eaten it anyway).
I'm better at making sweets and cakes.

Spaghetti Bolognese isn't hard at all..

First fry diced onion in olive oil until its brown, then add crushed garlic.. after that add the mince (lamb or beef mince).. use a fork or a wooden spoon to mash the mince in the pan. Add salt, peper, oregano, cumin powder, paperika and red chilli powder or flakes ( optional). continue frying until the meet becomes brown ( will take around 7 minutes). add chopped tomatos, tomato paste and little bit of lime juice. When the tomato is mashed down and the mixture reduces its liquid.. add half a cup of beef/chicken stock + tomato past. Continue simmering untill most of the water has evaporated(we want the sauce to reduce to get rid of some of the water - that will make it tastier.). Adjust salt/peper and add chopped parsley( or basil or coriender ). And the sauce is ready (should be thick and saucy).
Cook Spaghetti in salted boiling water with oil until its ready(10 mins)... drain it.. Get it back in the pan, add some butter and parsely.. mix it until the butter is melt and the pasta is hot.

Now put some pasta on a plate, and put the sauce on top of it.. grated cheese on the top.. and there you go.

Note: You can use canned tomato instead of fresh tomato ( prefer peeled tomato).

coz i squeezed one orange and put it on the flower :/ to give it that flavor

I don't cook, seriously. I don't even know how to make tea or fry an egg.. My husband accepted this in me from the beginning!

Many house holds in Oman hire a house-maid ( servent) to do that job for them!!:yuk:
Am totally against having a servent cooking for me.. because to me home food is about love on plate.:angel::yes::angel:

i do know some people who have a maid in the house...but even the richest of them who have drivers and stuff still like to cook themselves, maybe not everyday.

The house-maid cooks. I bring it for him, I arrange the table, I do everything else that doesn't involve cooking. It's fine for the both of us :)

I prefer working on a design , analytical Project for days than Enter the Kitchen for one day.:p

once after the cooking course, I tried cooking a Pizza and cake for desert... somehow the pizza was sweet and flat to the pan and the cake was thick , blown up and salty :yuk:

I try once a while cooking but it always goes to the garbage... even the dog refuses to eat it :(

eventhough, i still have faith on me :D ... im a girl!! some where i have to have it!

Listen... As I said before I LOVE cooking, and its one of my hobbies.
And when you are a begginer, its a , exuse me, stupid idea to start with Cakes and Pizza!!
These are not easy.. simply because you don't control them!!
Start with something on the flame... then move to baking!!

So I would say give it a go!!
List couple ofthings you like.. and we'll try to give you simple way to make them!

I just didnt understand some ingredients .. I need to expand my kitchen vocabulary

"beef mince."

" lasagne sheets " <--- I don't know how to cook them

"cream " <--- dream weap cream or something else? :think:

how long do you put it on fire? or do you make it like a cake? or Microwave will do it? ... anyway i just miss the Duration! I cannot tell when a meal is done or not

other than that,, i think it will be easy to make.. i print it and maybe next weekend :cute:

cream, normal cream. not whippy stuff. it's thicker than milk.

simmer, means cover and lower the flame. reduce means when the juices have gone down by half.

lasagne sheets. you buy them ready made.
do you have barilla or agnesi?

yes it goes in the oven like a 'cake'.
depends on the kind of lasagne you bought. with the barilla stuff its not more than half hour in a hot oven.

Anyways.. I will explain them in both arabic and english.

Beef Mince: لحم بقري مفروم ... which is ground meat of cow lol

buillion cube: I think its just cubed Chicken Stock.. مرقة دجاج او لحم.. مكعبات ماجي

simmer and let reduce: simmering is at lower temperature than boiling.. so very low bubling happens.

and reducing means like the liquid in the mixture is evaporating until the volume of the liquid is decreased.. so it becomes thicker.

lasagne sheets: The steps to make them is written on the packet.. but usually you don't have to cook them before puttting in the dish of the lasagne.. it cooks in the oven.

cream : Am not sure.. but i think its the white Béchamel sauce what she means. بشاميل


And i will post my version of the lasagne soon.. stay tuned.

no it's not bechamel sauce. bechamel sauce is made with flour butter (roux) and milk.
i'm talking about fresh cream.

i find bechamel too stodgy to use with pasta cos it's a flour based sauce, so i want something lighter although richer in many ways.
cream is a milk product, like yoghurt.

if you put an electric beater to it, it comes thick and fluffy, add sugar and you can make a trifle.

I make A bechamel sauce and add grated Chedder cheese to it, as well as seasoning it with salt/peper+chicken stock+parsley!
So instead of depending on the flour it self to thicken the milk, i use cheese as well.

a bechamel is done by making a roux and adding milk. you can add cheese to make a cheese sauce.

anyway

9 tomatoes or as much as u want :/ *cut the tops and take off whats inside and keep it*
white rice *put as much as u think it will be enough for the tomatoes*
chicken breast
4 large bell peppers, mixed colors *cut them in mid/small pieces
1 1/2 onion *cut it in a very small pieces*
garlic to give a taste
1/2 tea spoon salt
1/2 tea spoon of black pepper
oil
faheta cheese or mozzarella cheese *as u like*

...............

-boil the chicken and add some salt and black pepper
after the chicken is done.. take it and cut it in small pieces ..
-take the chicken water and put it into the white rice and add 1/2 tsp salt to it and let it be cooked till its done.. and while its the rice is been cooked
take the tomatoes and cut the top of it and take off all of whats inside by a spoon and keep it in a bowel ..

then put some oil in a pot and cook the bell peppers and the garlic with some onion and add the chicken to it and mix them and let them be cooked a little bit and then add the tomatoes sauce which you took off the fresh tomatoes .. and mix all of them and add some spices if u want .. then when u see the rice is half cooked take it out and add it to that final mix and let it be cooked with the chicken and the veges ... and when the rice is done take some and put some inside the tomatoes and then but the tomatoes in a baking dish and put some cheese on top and put it in the oven *350* for a little bit till the cheese is melted down and the tomatoes are little bit cooked

love that recipe!!! haven't had stuffed tomatoes for ages. we stuff tomatoes with rice here too. but we used tuna and serve the dish cold.yours sounds delicious.

well, as far as i remember, the kitchen memories always include eggs falling on the floor xD
i was making falafel with mom once, and when everyone was dipping them in oil it seemed like a piece of cake, when i tried i dipped my fingers instead lol! every time i remember i laugh haha. :p

then put some oil in a pot and cook the bell peppers and the garlic with some onion and add the chicken to it and mix them and let them be cooked a little bit and then add the tomatoes sauce which you took off the fresh tomatoes .. and mix all of them and add some spices if u want .. then when u see the rice is half cooked take it out and add it to that final mix and let it be cooked with the chicken and the veges ... and when the rice is done take some and put some inside the tomatoes and then but the tomatoes in a baking dish and put some cheese on top and put it in the oven *350* for a little bit till the cheese is melted down and the tomatoes are little bit cooked

i always wanted to make this.. never had the chance.. and tomatos in local super markets are so small to be stuffed!!
But sure will try it one day :)

love that recipe!!! haven't had stuffed tomatoes for ages. we stuff tomatoes with rice here too. but we used tuna and serve the dish cold.yours sounds delicious.

I love anything to do with tomatoes :P

Pasta, my family likes it the way I make, and the sauce I make is pretty authentic and genuinely called Riv's Special Pasta Sauce. It basically includes anythin I find above and below the shelf, some herbs from my garden n etc. once I made a very nice sauce and added it into pasta, and i din't kno actually how much chilly i put, so (I'm supposedlya spice eating freak!) when I finally finished it n presented to everyone, i took the first bite, n just slowly walked away from there, next thign i hear my big bro runnin towards me to smack my head for burnin his tongue wid HOTNESS lol! no one except me ate da damn thing, dat also wid help of dates :D

Worst moment in the kitchen : trying to turn condensed milk into caramel! Put the can of cond milk in a pan of boiling water, but then I forgot about it ( on the phone....again) and the tin exploded! :oSticky gooey caramel all over the kitchen walls, floor, cupboards even the ceiling. Took me days to clean it up! Still some nasty bits on the ceiling - may have to repaint! And I didnt have an excuse - I wasnt 8 when it happened!

Fav recipe: I LOVE Sweets - be warned this one is smore kinda sweet

this recipe has lots of variations. I'll list some below but feel free to use yr imagination. In my husband's family they call it "Sanafir" (like "Smurfs")! It is made of layers of pudding alternated with layers of cookies/biscuits. I make the basic recipe like this:

The pudding/cream is mixed in the blender:

2 cream caramel packages (the dry powder, straight from the box)
2 cans of thickened cream (tht Nestle stuff)
2 packages of dream whip (again, the dry powder,straight from the box)
1/3 cup of prepared milk
Cookies of choice

In a large dessert dish or pretty casserole pan, spread a very thin layer of the pudding/cream, just 2-3 Tablespoons of it.

On top of that goes 1 layer of Nice coconut cookies. Dip each cookies quickly (but completely) in some prepared milk. Lay cookies flat and line up cookies to
fully cover the botton of the dish (only 1 cookie thick). Break the cookies if necessary to fill in areas around the edges.

Spread 1/4 of the pudding/cream evenly over the cookies.

Put on another layer of cookies (dipping each cookie into milk first). Follow that with a layer of pudding/cream. And repeat until you've got 4 layers of
cookies with pudding/cream on top. Then put in the refrigerator until chilled.

Prepare a package of dream whip according to the instructions on the dream whip box. Spread over the dessert and garnish with chopped nuts and/or coconut.

Cut or spoon out servings onto dessert plates. Serve and enjoy.

VARIATIONS:
1 - try some fruit. Canned pineapple or mixed fruit works well, especially if you want to be able to keep leftovers for a few days in the refrigerator.
2 - Instead of Nice cookies, you can use Marie biscuits, Glucose biscuits, or even plain white bread (buy a loaf of white sandwich slices). You could also
use sliced pound cake or sliced jelly rolls.
3 - Instead of using just cream caramel packets in the pudding/cream, you could alternate layers of reg creme caramel with choc creme caramel.
4 - if you want it a little less sweet - dip the cookis in cold black coffee instead of milk ( kinda gives a tiramisu effect)
5 - Garnishes include things like whole nuts, chopped nuts, grated coconut, chopped fruit, chocolate shavings, the drizzled syrup from the cream caramel
packets, etc.

OOOOOOhhhh its so gooood and in a perfect world ( where there would only be blind men) I could eat this everyday morning noon and night :p

chop really finely.
fry off and use as if they are meat. it works for me very well when i have vegetarian guests.

My cheesecake.

for the base:

you need 2 packets digestive biscuits.

bash everything to oblivion., until powdered. use a rolling pin or use your hand held machine.

mix with some cake margarine, using a spoon.

press on a loose pan dish

one of these dishes, where the bottom comes off...

put in fridge to harden. (i put it in the freezer)

now for the cheese filling

2 packets of philadelphia cheese,
beat with one carton of cream
two spoons of sugar
lemon
if you want, grate some chocolate into the mix.

spoon over the biscuit base.

top up with 1 tin of cherry pie filling.



leave for 4 hours in fridge.

Most importantly:

lock riv away in the attic.
take a spatula and scrape the sides from the cake. loosen the 'belt' of the pie dish. and serve.

should look like this...here's a pic of a strawberry cheesecake. i prefer cherry for adults.

i remmeber when the first time i ever thought i knew how to boil chiken :P i took out the frozen chiken from the freezer.. n STRAIGHT ahead poped it into hot water..
helo nosa.. did it ever occur to u that the chiken had to be cleaned :P?? well no i had no idea.. so when we took the chiken out.. it had plastic n paper stuffed inside the chiken ! ( part of the wrapping)
haha since then i only used ready cut breast meat :P ( NEVER a whole chiken :P )

So I think this is the easiest cheese cake recipe on the planet!
All you have to go is get :


1 pack of digestive biscuits
butter
1 pineapple jelly
10 pieces of kiri cheese

Method:
First for the base:
1. you have to crush the digestive using a blender n making sure there r no more big pieces

2. heat about 1/2 a pack of butter on the fire n add the biscuit to it.. Stir it until it’s a lil brown, or until ur nose smells some lovely buttery digestive smell!

3. pour it in the plate you want to serve it in and with a mashing tool try to even it all up. And put it in the fridge ( or freezer ) till it cools down a lil.

For the filling:
1. add the jelly you have in 1 cup of water, when its all melted put in the fridge ( or freezer ) to cool, but make sure it doesn't get hard

2. in a blender pour the ( can of cream ) + the 10 kiri cheese , the pack of whipped cream , and the jelly.

4. pour it on top of the layer of biscuit you've done b4m then put in the fridge for a couple of hours till it's ready! About 5 hours.

I love eating dessert, but hate making it. Always have a sink and a half full of stuff to wash and a kitchen to clean.

My style of cooking is 'no mess' cooking. :hyper:

I love the preperation, but hate standing by the cooker to wait for things to cook..
8 in 10 winter meals are cooked in the oven. Fish, chicken or meat, even pasta and rice. You prepare, you stack, you stick in oven on a low heat and forget it for 2-3 hours (if chicken or red meat) till it's reached the 'melt in your mouth' point.

This is what I'm making today. We eat alot of chicken here, I don't mind it, but I get sick of it sometimes. Today I had three whole chickens that had to be defrosted. So I'm gonna cook the three and freeze two. That's two days dinners ready, with time and gas saved.

I love this recipe. It's easy and it's delicious. The trick is to marinade the chicken first.

I used:

An onion
1 green pepper
2 tomatoes
3 large lemons
4 table spoons of honey (Gozo honey is delicious!)
1 table spoon olive oil
paprika
salt - pepper



Chop the veg.
Smear honey all over the chicken. Use clean fingers here or a pastry brush. :p
Drizzle lemon juice over the whole chicken..
Sprinkle paprika, salt and pepper.
Put the chicken into a large bowl and add the chopped veg.

You can either cover it and stick it in the fridge.. or for an even better result, you wrap it in foil or clingfilm.

Then you let it rest for atleast an hour. The more, the better.

Then, if it's in foil you can take it as it is to your barbeque OR you can stick it with foil and all into the oven for an hour and uncover it for 30 minutes after that..

Or just unwrap, put in the oven over sliced potatoes with the veg and all (you have to add just a little stock or 'watered down' tomato sauce) and cook on a very low heat for a couple of hours, turn up the heat to brown it during the last half hour. The honey and lemon caramalize the outer crust while the veg and spices keep it from tasting too sweet. Perfect balance..

You can stuff it with rice if you like that kind of thing.. I'm not too keen on rice in chicken though..
